You won’t believe it. As I mentioned a couple days ago, I am still a newbie Instant Pot learner but let me just tell you that I made this recipe and then converted it into ANOTHER meal too! It was ligit a win/win recipe. Here’s what I liked about the recipe:
- Easy (literally, you just dump the items in)
- Quick (10-12 minutes)
- Healthy (all veggie… but you could certainly add animal protein! Very versatile)
- Can serve for more than one meal! (and/or leftovers)
I mean. Seriously. Just get ready to thank me. Yep, get ready.
Instant Pot: Tomato, Bean + Lentil Bowl
Servings: 3-4
Ingredients:
- 1 small can of diced tomatoes (with your choice of seasoning, if you choose. I chose a can of diced tomatoes with garlic and onion)
- 1 can of white beans, drained
- ¾ c. frozen chopped spinach (or 1- 1 1/2 large handful of fresh spinach)
- 2 yellow squash, skin off and chopped in large chunks
- ¼-1/2 c. chopped onion
- 1 pepper, chopped
- ¾ c. cooked lentils (thawed or frozen)
- 2-3 T. EVOO
- ½ c. water
- 1 cup shredded carrots
- 1 t. oregano
- 1 t. basil
- 1/2 t. parsley
- Pinch of salt after it’s done cooking
- Optional: shredded cheese for topping
Method:
Put EVOO in IP and press saute. Add onion, pepper, carrots. Saute with no cover for a few minutes, stirring frequently. Add all remaining ingredients (minus cheese and salt) and cover. Change setting to manual/high pressure for 7 minutes. After 7 minutes, allow vent on cover to steam release (natural release) for a few minutes. Carefully lift lid away from you and stir. Add a pinch of salt and a sprinkle of cheese, if desired.
Total time: 10-12 minutes

Breakfast Egg Bowl
Yes, that’s right… here we go with a second recipe after making the above Tomato, Bean & Lentil Bowl. So IF you have leftovers (yes, IF is the key word depending on how many people you are serving), I reserved some for the morning and just heated it up in the microwave (or you could in a pot on the stove top). Then I cooked an egg in a skillet and placed it on top of my heated leftovers. Seriously. It was great, filling (hello fiber and plant proteins!), and EASY.
